This super simple and utterly delicious treat is perfect for a picnic or a quick dessert at home. Loved by toddlers, kids and adults alike, it’s light, refreshing, and packed with nutrients for growing children.
INGREDIENTS
For the Chia Pudding:
- 1 x Norish Blooming Blueberry Chia Pudding sachet
- 4 tbsp chia seeds
- 500ml coconut milk
- 1 tsp maple syrup or runny honey
- 1 tsp vanilla essence
For the Yoghurt Layer:
- 200g coconut yoghurt
For the Berry Layer:
- A handful of blueberries
- A handful of strawberries, hulled and chopped
- A handful of raspberries
- 1–2 peaches, diced
- 1 x lemon, juiced
- 2 tsp maple syrup or honey
Optional Crunch Topping:
- A handful of chopped nuts
- Freeze-dried fruit
METHOD
Make the Chia Pudding:
- Combine the chia pudding sachet, chia seeds, coconut milk, maple syrup (or honey), and vanilla essence in a jar.
- Shake well to ensure no lumps form.
- Refrigerate for at least 3 hours or overnight until set.
Prepare the Berry Layer:
- In a bowl, combine the blueberries, strawberries, raspberries, and peaches.
- Squeeze over the lemon juice and drizzle with maple syrup or honey.
- Mix gently and let sit for 10 minutes to macerate. (If preparing ahead, refrigerate until ready to use.)
Assemble the Parfaits:
- In a serving glass or jar, layer the chia pudding, followed by a layer of coconut yoghurt, then a layer of the berry mixture.
- Repeat the layers one more time, finishing with the berries on top.
Add Optional Toppings:
Sprinkle with chopped nuts or freeze-dried fruit for added crunch and flavour.
Serve:
Enjoy immediately or cover and refrigerate until ready to serve. Perfect for picnics or as a light dessert.
Notes:
- For toddlers or young children, omit or finely chop the nuts for safety.
- Customisable: Swap out the summer fruits for whatever’s in season.
- Avoid using honey for babies under 1 year old.
